Try this recipe and let me know how it comes out.
1) Salt and Cut 2 lbs of tri-tip into chunks. Put meat in crock pot.
2) Blend 5 dried Nuevo Mexico Chiles, 4 dried Guajillo Chiles, 3 Tomatillos, 3 Garlic Cloves, 1 tsp Vinegar, 1Tbsp Oregano, 2 Cloves, 3 Pepper Corns and 1 tsp salt. (Add water)
3) Strain blender ingredients into the crock pot. Place 3-5 bay leaves on top.
4) Cook on high for 1 hour and on low for 7 hours. Or 6 hours in oven at 375.
(Remove bay leaves when done.)
